My parents imigrated to England, the home of my mothers ancestors, in the 1950s. The father of my mother was and English gentleman, and a law professor. He was an immigrant to the United States and them to several destinations in the Caribbean. He met and marry my grand-mother in the caribbean.
I was privileged to live with both my parents, and also with my grand parents. My grand mother was a health enthuasist ; I enjoyed her healthy methods of cooking calories filled meals, like the British fish and chips. While my parents would take me to the chip shop for a treat of fish and chips; my grand mother would prepare it at home.
My grand mother suffers from high blood pressure -- so, for many of her healthy foods salts, carbohydrates, oils and sugars was used sparingly. Growing up in England --from my knowledge of the other English youngsters, I don't believe that there were any, who did not look forward to the trip to the fish and chip shop. We have come to know "chips" as "French fries". Therefore, we expect it to be always fried. (deep fried).
Now that I am grown and understand nutrition, the only good thing I can remember was the merchants asking each patron "salt and vinegar?" The answer would always be a jolly, "yes please." Seldom was there a "no thank you." In the cookbook Fabulous Foods: Fun Flavors, there is a delicious recipe called Baked french fries, (page 91) . Hopefully every person will prepare there fries or chips baked, or, saute like the breakfast potato with cheese (page. 55) also in this cookbook. These methods are so much healthier, more filling,easier and less costly--especially when prepared at home.
