TYPES of Vegetarians
Ovo-Lacto Vegetarian: No meat or fish, some dairy and eggs {this is the most common type of vegetarian}.
Lacto Vegetarian: No meat or fish, some dairy, no eggs.
Vegan: No meat or fish, no dairy, no eggs
Crusto-vegetarian: Eats shrimp, crab or other crustaceans.
Mollo-vegetarian: Eats clams, scallops, oysters or other mollusks.
Porco-vegetarian: Eats pig.
Repto-vegetarian: Eats snakes and other reptiles.
Ento-vegetarian: Eats insects.
Worried about Protein?
The recommended daily allowance of protein for women is 44 grams.
The average vegetarian female consumes 65 grams.
The recommended daily allowance of protein for men is 56 grams.
The average vegetarian male consumes 105 grams.
FACTS
The first of October is world Vegetarian Day.
Nearly half of all vegetarian adults cite health as their number-one reason for pushing aside the meat.
Estimates indicate that 30 to 70 percent of cancers in the United States may be diet related.
The two types with the strongest links to fat consumption are breast and colon cancers.
Cooking food until it is blackened- such as toasting a bagel on the extra dark setting-
May increase your cancer risk.
Scientists have found mutagens in very well cooked vegetarian foods.
Mutagens are almost always carcinogenic.
Author John Robbins states that soybeans are 40 times more energy efficient than feedlot beef.

STUFFED PUMPKINS WITH HERBS AND BREAD CRUMBS

SERVES 4
When baking miniature pumpkins, the rind will soften and the flesh sweetens.
Providing a delicious counterpart to the savory stuffing.
Preheat the oven to 325 degrees.
INGREDIENTS
4 miniature pumpkins approximately 5 inches in diameter
2 cups cubed rye or whole-wheat bread
½ cup thinly sliced carrots
1 cup diced onion
½ cup vegetable stock
½ cup diced celery
1 teaspoon dried marjoram
1 teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon freshly ground black pepper
¼ cup minced fresh parsley
1 teaspoon apple juice or virgin olive oil
INSTRUCTIONS
Cut off pumpkin tops and set aside.
Scoop out the seeds and membranes.
Place pumpkin shells on a large baking sheet.
In a medium bowl, combine the remaining ingredients.
Pack the stuffing tightly into pumpkin cavities.
Cover with the reserved tops.
Bake until the pumpkin shells are tender.
Approximately 45 minutes.
Serve hot!
