It's finally getting cold here in Louisiana which means... it's soup weather and chili weather. I had a special request from a friend for this soup recipe. I thought you might all enjoy it.
HAMBURGER SOUP
1 LB. GROUND MEAT
1 CAN DICED TOMATOES
1 LARGE WHITE ONION, CHOPPED
1 CAN TOMATO SAUCE
3 BEEF BOUILLON CUBES
TONY'S CREOLE SEASONING TO TASTE
2 C. MIXED VEGETABLES (I JUST USE A BAG OF FROZEN SOUP VEGETABLES)
1 CAN WHOLE KERNAL CORN
1 TOE OF GARLIC, MINCED
1 C CUBED POTATOES
CRACKERS OR CORNBREAD
Brown meat, onion, and garlic with desired amount of seasonings. Drain off excess fat. Drain canned vegetables (or thaw frozen veggies) and add to pot with remaining ingredients (except crackers or cornbread of course). Bring to a boil, cover and reduce heat. Cook on low until potatoes are done. Serve with crackers or cornbread.
I like to change this recipe up and just add different vegetables sometimes. I love to add a bag of frozen okra and tomatoes (thawed).

Where in Louisiana do you live? I used to live near Ponchatoula, in Tangipahoa Parish. :) |
