Potato soup great for cold weather days.
This is another soup recipe that I get many requests for this time of year. It warms the soul and sticks to the ribs. I thought you might want to try it.
POTATO SOUP
4 C. POTATOES, PEALED AND CUBED
1 - 2 GREEN ONIONS, CHOPPED
3/4 C. CUBED COOKED HAM (THE BEST YOU CAN FIND)- I LIKE TO BROWN MINE A LITTLE IN A SEPARATE SKILLET FIRST
2 1/2 TBSP. SELF-RISING FLOUR
3 TBSP. OIL
1/2 MED. ONION, CHOPPED
SALT AND PEPPER TO TASTE
1 1/2 C. MILK
WATER TO COVER
SMALL JAR PIMENTOS, OPTIONAL
Place potatoes in iron pot with cooking oil. Over medium heat, cook potatoes until they start to appear transparent. Add green onions and white onions, ham, salt, and pepper, and stir until onions are clear. Add flour and water to cover. Stir and boil gently until potatoes are tender. Add milk (or a can of cream/evaporated milk) and bring to a boil then remove from heat. Add pimentos if desired. This add color and is beautiful at Christmas with the green onions. Let sit awhile with lid on before servings so all the flavors marry. If you like the green onions, add a few more (raw) to the top.
Tip: the flour is easier to blend in if you add it to the water in a separate bowl and whisk until blended before adding to the pot. Serve with crackers.

You're making me hon-gree, Jean, with these soup recipes! LOL One day I'll have to write down my Mother's homemade chicken noodle soup--takes four hours to prepare, but mmmmmmmm, is it worth it!! LOL Saving this one, too. :)
