Got hungry for a favorite Indonesian dish, but I lacked an ingredient--bean sprouts. What to do?I'd bought shrimp chips a few days back, anticipating a banquet of this vegetarian dish, but when I got ready to put it together, I realized I didn't have bean sprouts, a major ingredient. But I had cabbage. Could it substitute?
Yes.
You might like to try fixing it if you're cutting down on your meat consumption and if you like peanuts. I think no one who hates peanuts will like Indonesian food because they're in EVERYTHING. They grow peanuts as a rotation crop to restore the nitrogen in their rice fields, so they have a lot of them available.
Anyway, here goes:
Ingredients:
white potato, medium size
chopped onion, half cup
peanut butter, half cup
water, 1 cup
hard cooked egg, quartered
raw veggies, 1 cup (original recipe calls for bean sprouts. I used shredded cabbage and raw mushrooms)
chili paste (1 tsp or more, depending how much kick you want)
shrimp chips
Method:
Scrub unpeeled potato, slice 1/4 inch thick, and boil al dente (still a bit firm) about 5 minutes.
Thin peanut butter and chili paste with water to make a soupy paste.
Combine all ingredients,
If you're vegetarian and are concerned about the shrimp chips, read the ingredients. Most brands in America have NO SHRIMP in the chips, only artificial flavor.
Serve a handful of shrimp chips on the side for extra appeal.
This should serve two people, but I gobbled it all down in one sitting.

This is a marvelously nourishing dish. Try it. If you like peanut butter, you'll like it.
Oh, by the way, my grandson David Verburg didn't make the Olympics team this year, but is competing this week in Mexico. That kid is doing amazing things! Couldn't happen to a nicer guy.
