Team Montana goes to battle

This weekend our daughter, Sara, is participating in the National ProStart Invitational Culinary Competition in San Diego as part of the four member team representing Montana.

Basically this means that their team will compete against 37 other teams as they battle to create a full course meal with an appetizer, main dish, and dessert in a one hour time frame. The other catch?? Each team is only allowed two small propane burners on which to create their meals. Sound difficult? Let's just say that before Sara became a part of the team I didn't even know what half of the words she used meant. I know I couldn't do what they do, but it's an amazing experience to watch and very yummy to eat!!

After Sara was delivered to the airport early this morning, all of those terms started floating through my head in a steady rhythm...(maybe it was lack of sleep?? or my way of counting sheep? (several of their food ingredients come from sheep...hee, hee...)) and this poem was the result.

Team Montana Fight Song

Sami, Sara, Nash and Greg
will turn you on your heads,
with quail eggs & focaccia bread
on a bed of Jicama slaw!

Slicing, dicing, mincing cuts--
brunoise and chiffonade…
and don’t forget the julienne!
It’s the best one on the block!

Brussel sprouts and fans of yams
and duxelle-stuffed lamb chops
covered with a truffle au jus--
We’re going to beat you!

Sandwiches with goat cheese in them,
Flathead cherries too…
grilled until they’re nice and hot
then dipped in a rhubarb soup.

Duck prosciutto, sautéed liver,
(there’s pound cake for dessert!)
Ravioli stuffed with sweet breads…
You’ll be glad that you’ve been fed!

All this food arranged in splendor…
served up with our hearts--
showing off the culinary arts
of Sara, Sami, Nash, & Greg!

Hope it brings a smile to your face as you help me celebrate our daughter's achievements... Win or lose, this team has poured their hearts into this food.
