Health benefits of blueberries.

I have had a love affair with blueberries since college...they are a burst of flavor.  Nutritionally, blueberries are dynamos.  Health benefits include:  good source of fiber, manganese, Vitamin C, and Vitamin B6.  They are also rich in phytonutrients and antioxidants, which may reduce inflammation.  A 1-cup serving provides 19% of the recommended amounts of Vitamin C for adult women and just 84 calories.

Blueberries' simplicity and sophistication cannot be beat; just rinse and they are ready!  No cutting, chopping, etc you can not get much easier than that.

Quick healthy eating ideas:

  • Top Greek yogurt or breakfast cereals with blueberries.
  • Sprinkle them in muffins, pancakes, angel food cake or ginger bread.
  • Add them to salads; they can be gently toosed into a garden salad or try them in a rice, couscous or other grain salad.
