Mock Chicken Marsala

The first time I tried chicken marsala was in a little restaurant in the North Carolina mountains.  It sure was good.  So when I came home I started looking for a recipe.  As usual I ended up taking ingredients from several until I had the taste I wanted.  My biggest problem came when I went to the wine department in the grocery store to find Marsala wine.  I looked and looked and didn't see it.  I'm not a big wine person so I really didn't know what wine section to look in.  The deli was near so I walked over to see if someone could help.  The woman behind the counter didn't know either but the man she had been waiting on said he could help.  He was a chef at one of the country clubs here in Charlotte and made it all the time.  He walked back to the wines with me and pointed it out.  I was shocked by the price.  It was abour $40 a bottle!  I love this dish but not that much.  He then told me a secret.  He showed me a white wine that was only about $10 a bottle and said it would work just as well.  You know what? It did and still does.  So if you try this recipe, found on page 32 of my book Stir, Laugh, Repeat, just find a good white wine and don't buy that high-priced stuff.
