Up until a couple of years ago, the agave was a protected plant in Arizona. Some people eat the flower petals, finding that some taste better than others. If you eat the entire or the bottom of the petals, you will find them very bitter. The flower buds can be cooked before they open. They taste a tad like green beans. This seems to be a common flavor among cacti. (The prickly pear pad tastes like a lemony green bean.) The root crowns can be boiled in addition to the way the Indians prepared it.....
