More than fifty of my own original recipes, sprinkled with a few of my poems, featuring the Whole Foods Mediterranean Cuisine style, aromas and flavors that are pleasing to the palate and good for the heart.
Farro e Ceci, Spelt and Chickpeas, is one of the oldest and most beloved recipes in Central Italy, where families have been enjoying this heartwarming stew for over a thousand years. That's right! A thousand years! In fact, my father used to tell me that the Roman soldiers were considered invincible because they ate this hearty main course everyday.
My book is very simple, in a way. It may, at first look, appear more of a Fusion Cuisine cookbook than anything else, but the fact that I include exotic items such as Quinoa and Cassava in my recipes, doesn't mean I've given up on my Italian roots.
My style of cooking is what determines the outcome: when you use Quinoa instead of Bulghur, to make a Tabouli Salad, the essence of your dish remains purely Mediterranean. You've simply opened the doors of your kitchen to the world's bounty and allowed yourself to appreciate its diversity.
These are recipes I've created and served many times over the years, both to my students as well as my children. I now share them with everyone else, hoping they will bring you the same joy, love of good food and appreciation of life they have brought us.
This book is dedicated to all those wonderful folks who, through the years, have come to my cooking classes, have utilized my recipes and have otherwise been appreciative of my work in the kitchen.
