Boil a quart of apple juice and add four teaspoons of chamomile or lemon balm to the juice. Boil for 2 minutes, then remove and allow to steep for 20 minute. Strain the herbs and pour the juice into Popsicle containers or in ice cube trays. Freeze and then enjoy. If using ice cube trays, cover with plastic wrap and stick a tooth pick in each ice cube for an easy stick.
