Two Beautiful Round Seed-cakes
3 cups flour
2 cups wheat flour
2 packets of yeast
1/4 cup Ale at room temperature
1/4 tsp. salt
6 oz. (1 and 1/2 sticks) sweet butter
1 and 1/2 cups sugar
4 eggs, beaten
2 tablespoons seeds (crushed anise, caraway,
or cardamom, choose your favorite)
1 and 1/2 to 2 cups milk
Sift the flour and salt together into a large bowl. Dissolve the yeast in the ale, along with a tablespoon of the sugar. Cream the butter and sugar together in a separate bowl. Beat in the eggs and seeds. Make a well in the flour and add the dissolved yeast. Fold the flour into the yeast mixture, then fold in the butter, sugar and eggs. Slowly beat in enough milk to make a smooth, thick batter. Pour the batter into two 8 inch round greased cake pans. Bake in the middle of your oven at 350 degrees F for 45 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool slightly before turning onto a cake rack.
