The potato. It ain't simply your basic throw-it-in-the-pot, boil until soft and serve-with-melted-butter Canadian staple. No sir. Just ask Agnes Toews-Andrews of Beaverlodge(Alberta).
She's become something of a potato expert this past 3 years and has now compiled her findings into a delightful different cookbook, titled The Incredible Potato.
The book released October 10th across Canada contains more than 200 recipes from around the world.
It was while living in North Bay Ontario and after reading an article on the potato in the National Geographic that her interest in potatoes really grew.
She began collecting the history of the potato and was so excited about the nutrition of the potato that she decided to write a book. Her husband, an officer in the military often brought her cookbooks from foreign countries.
