This book is a history of the potato, and a cookbook.
From delicious breakfast, lunch and dinner dishes, imaginative appetizers, snacks, salads, side dishes, soups, breads and desserts, the potato reigns with an epicurian fillip in this book.

There is no food on earth as complete as the potato.

The healing properties of the potato are stressed and myths debunked about a food that has been catagorized as fattening and full of starch. When the potato is baked or boiled in it's skin, nearly all of the starch is retained in the cell fibre and eliminated from the body. The potato is 99% fat free and contains a good source of protein. The potato is high in B vitamins, Vitamin, C, amino acids, alpha lipoic acid- a powerful antioxident, nitrogen, phosphorus and potassium. All the potato basically lacks is calcium so add a fresh green salad or veggie and voila! dinner is nutritious and balanced. It was proven in both world wars that you could survive soley on the potato.

Employ the apple of Earth regularily; let Queen potato reign in your household and enjoy it's anti-aging and satisfying qualities. Long live the potato!

"New York state is where the potato chip is alleged to have been invented. In 1853, a short order cook named George Crum, an American Indian, plotted revenge on a customer who complained about Crum's thick-fried potatoes. In defiance he prepared some superthin slices of potato, deep-fried them and the rest is history! Today potato chips are an industry yielding 3 billion dollars a year in the USA."

Local Potato Expert Publishes Delighful Book
The potato. It ain't simply your basic throw-it-in-the-pot, boil until soft and serve-with-melted-butter Canadian staple. No sir. Just ask Agnes Toews-Andrews of Beaverlodge(Alberta).
She's become something of a potato expert this past 3 years and has now compiled her findings into a delightful different cookbook, titled The Incredible Potato.
The book released October 10th across Canada contains more than 200 recipes from around the world.
It was while living in North Bay Ontario and after reading an article on the potato in the National Geographic that her interest in potatoes really grew.
She began collecting the history of the potato and was so excited about the nutrition of the potato that she decided to write a book. Her husband, an officer in the military often brought her cookbooks from foreign countries.
The book is a complete guide to the king of foods, potato, and should be on everyone's cookbook shelf.Designed and printed by Centax Books in Regina, the book has delightful potato caricatures throughout indicating historical, nutritional, culinary and humourous stories.
