The gluten is the part of the grain which gives it its ‘stretchiness’, what gives bread its texture. Non-gluten ‘breads’ are available, but they are often much more like cake, more crumbly and without the ‘mouth feel’ of normal bread.
Even though gluten is only in the protein part, it is not safe to eat any portion of the grains which contain it (including oats if you are affected by oat-’gluten’), because there will be a certain amount of gluten still present.
