The importance of food at this period of the year to all.
Every year from November through December, Food becomes a central focus to all of us in our families and businesses. This season permits family reunions, eating out more than normal, special celebrations, when events are attended everywhere; and when food will be consumed in large volumes / quantities. For the safety of our costumers and each family member, food must be cared for to remain suitable for human consumption during the season at all times.
Remember to cook all hot foods to the required cooking temperatures and maintain them (in hot hold ) to remain at least 135 degrees F. until service. Cold foods are to be carefully prepared and kept cold at 40 degrees F. or below for normal service .
Many a times cooked hot foods must be kept cold in holding units (refrigerator and Walk-in units)until service is rendered with the food. Hot cooked foods that were stored cold must be re-heated quickly to 165 degrees F. before service. In the preparation process, personal hygiene for each food handler is of primary importance. When we remember to keep food safe; the reunions, and celebrations happening in our families and businesses will be remembered with excellent memories, until next year.
