Geeks Frito Pie

Just a quick easy recipe to use with left-over Mike's Two Can chili (if there is any!)

This is another poverty recipe that Susan and I made during the Navy and early married years. It is really quite simple.

 

Equipment:

 

Lasagna Pan or deep rectangular glass or ceramic dish

 

Ingredients:

 

2 – 8 oz cans store bought chili (or left over Mike’s Two Can Chili)

1 – Large bag Fritos or your preferred corn tortilla chip

1 – half pound of grated Monterey jack cheese

Two cups sliced jalapenos (optional)

Two cups chopped onions (optional)

 

Directions:

 

Pre-warm oven to 250 degrees

Place layer of Fritos or tortilla chips in bottom of pan

Place layer of chili (one can or equivalent in left-over Mike’s Two-Can Chili)

Place layer of onions and jalapenos (optional)

Place layer of cheese (quarter pound)

Repeat

 

You should end up with two layers of Fritos, chili, onions and peppers and cheese ending up with cheese on top. Like a chili Lasagna.

 

Place in oven at 250 degrees, heat until bubbly and cheese is melted. Shouldn’t take more than 30 minutes. You want to warm this, not cook it. Serves 4 or more depending how many servings they want!
