Author's Note:
In one of my past events I participated in an event called "Poetry and Pie."

The muse and the deserts were delicious, and this is an excellent fund raising idea for any organization raising money for literacy (or what ever turns your pages).

So for all y'all folk who WISH you had southern relatives, enjoy this Chess Pie Recipe. My Grandmama Ruby used to
make these and sweet 'tata pies all the time. If only she could remember how again. . . she moves into a private Alzheimer's residence in a few days.

So have a slice, in honor of all who wish the could remember.

Southern Cooking - Mrs. S.R. Dull
(original publication 1928)
Cherokee

* 1 cup sugar
* 1 cup butter
* 3 egg yolks and 1 white
* 3 tablespoons water
* 1 teaspoon vanilla

Cream butter and sugar as if for cake. Add egg yolks and 1 white and beat until foamy; add water and flavoring, again beating until well mixed. Pour this
into pan lined with raw pastry and cook.

This is delicious. When done the top is covered with damson preserves and meringue and slipped back in the stove
to cook meringue. Or it may be served just as it is at first (i.e. serve it "naked"), it makes lovely tits. . . whoops, I meant "tarts."

Note: No time or temperature is included with this recipe. Generally, chess pie is baked at 350° for anywhere from 35 minutes to 1 hour. Test with a clean knife. When it comes out clean (no custard clinging to it, the pie is done.

Goes well with a dollop of cream...
