Nan's Biscuits

There is an important health food that we are neglecting to add to our shopping carts - one that is absolutely free, but provides benefits that will reproduce and grow on their own, as soon as you use it.
Why bake biscuits from scratch in the first place? In my experience, the main reason is for sharing; whatever form your biscuits take, it's the sharing ingredient that forms the delicious loving centre.

Nan's Biscuits!

A biscuit,
A biscuit,
A curious thing,
What makes it delicious?
What makes my mouth sing?

It's a tasty conundrum,
I can't figure out,
When I think of
What's in it,
I harbour grave doubt;

Each simple input
Would be hard to ingest,
But oh, what a treat,
When transformed by the rest!

Machine-made confections
Could never compare
To the ones made from scratch,
Created to share;

You chose them all well,
Each delectable part,
Now they've greeted my mouth,
And gone straight to my heart -

Our love is ingrained from childhood. Nothing like melted butter on hot biscuits. My mother made two kinds… The light ones made for bread dough and very much like bread, and the heavy ones, the baking powder biscuits, that I liked with preserves on like strawberry jam.

The reason for our craving is sugar. When our saliva mixes with the wheat starch in the biscuit, it magically turns to sugar and gives us energy for the day. Carbohydrates like this are the primary cause of obesity and I stopped eating them when I stopped being hyperactive at 20. Later, when trying out baking powder biscuits again, I got deathly ill. Probably because they were made with milk and I am lactose intolerant.

Biscuits certainly are comfort food. But I'm no longer comfortable with getting fat.
