A very sweet sentiment that I'm sure your wife will enjoy.
I believe if we use someone else's poetry we should always give them credit for their creativity/accomplishment. There are too many beautiful "anonymous" poems out there that people have plagiarized.

That's a tough promise to keep… A red, red rose every day. There may be days when [there] may not be a rose to be found, anywhere. ;-)
I prefer to kiss every day… It doesn't cost anything, is not materialistic (diamonds, chocolate, roses buying love?), and is much more intimate.
Otherwise, it's a lovely poem she will like. Showing your devotion for writing it.
