This is an outstanding article. As the son of Hungarians I feel embarrassed I didn't know all that. You might mention in your next article that Hungarians are not widely known for cooking outside goulash.
Hungarians biggest contributions to the coulinary arts have gone unoticed for centuries.
Sausage, Head Cheese, Salami, Bacon, and other carnivore delicasies have been ignored in the west too long. Even Klinger on MASH kept ordering ribs from a Toledo Hungarian restaurant because the ignorant writers didn't realize thats not Hungarian cuisine!
