1kg (2 lbs) cold boiled potatoes
1 large onion, finely chopped (optional)
1 clove garlic, crushed and finely chopped (optional)
4 tblsp olive oil
1 tsp salt
2 tblsp nut or soy milk
This is a very variable recipe, each family having their own favorite way of making it.
Note: Onions and garlic are not part of the “classic” rösti - about 30% of recipes include one or other (more often onions than garlic).
It is important that the potatoes be cooked at least 1 day beforehand. Boil them unpeeled until semi-tender the day before preparation.
Peel and grate the potatoes.
Heat oil in skillet. If using onions or garlic, cook very gently until soft. Add potatoes and stir into the onions and/or garlic, sprinkle with salt. Using a spatula, press together to form a round loaf or patty. Sprinkle with soy or nut milk and cover tightly. Reduce heat as soon as the potatoes begin to sizzle.
Fry very slowly for another 30 minutes. Do not stir.
