As with any kitchen endeavor, there have been disappointments. I tested three different recipes for a simple microwave chocolate mug cake. None of them contained eggs so they were even easier [and less expensive] to make. I carefully followed the directions, never cooking it for more than a minute, even buying a new mug that had the words microwave-safe on the bottom. The batter tasted promising but the results ranged from awful to meh. Scrap that, no chocolate mug cake recipes to share here. Chocolate should be baked in an oven for the best results. I even tried a “simple” chocolate mousse recipe that actually required a PhD in dessertology.
The easiest recipes revolved around some unique varieties of homemade hot chocolate. Making white hot chocolate in various colors and flavors brought me back to my preteen! years I made sure to pour in a decent amount of white chocolate chips and chunks to have the sweetest and creamiest hot chocolate mixed with fresh whipped cream. The bonus was that testing them just before turning in for the night helped me sleep even better.
What motivated me to create all these recipes was the fact that I wanted a variety of desserts rather than just settle for no bake cookies or a bowl of ice cream. Especially in the summertime, who doesn’t love some ice cream? Until I thought about making that awesome hard shell topping to go along with my preferred flavor of chocolate or chocolate mint. Why not make some milkshakes? While I thought about baking a chocolate pound cake, the idea of the oven being on for about an hour wasn’t too appealing, even if it was late at night. But chocolate mini Bundt cakes only took half as long and I could learn how to pipe that distinctive flower petal icing. And the ideas kept rolling on and soon I had lots of recipes to share with fans of all four types of chocolate!
