My Southern Hemisphere Version of My Dad's German Apple Pancakes (Light fluffy pancakes with curried apple filling)
I concoted this recipe when I was single-handing my 35-foot sailboat from San Francisco to 1837 miles off the Galapagos. I had departed the harbor of San Diego with 40 pounds of apples which I soon discovered would spoil in the warm climes south of the border if I didn't use them up quickly. I didn't want to waste space in my fridge for apples -- I needed the precious space for exotic cheeses! My dad was very formal European and never set foot in the kitchen. "Dats your Modder's domain," he would say. But once a month, magically, would appear on our dining room table German Apple Pancakes. To the day he died, he never admitted he was the heinzelman (elf) who made them!
