That’s not a license to eat all the pie and ice cream you want; but now is the time to heal and rebuild your health, not count calories.

Cabbage and Bean Soup
Take advantage of those ready-to-use bags of cabbage slaw mixes or other greens for this soup.
Ingredients:
Nonstick cooking spray
1 cup frozen seasoning blend
1 cup lean cooked ham cubes
1 14-15 oz. can small white beans, rinsed and drained.
1 quart beef, chicken, or vegetable stock
1 pound bag cabbage slaw mix
1 tsp. black pepper
1 bay leaf
1 cup frozen hash brown potatoes
Directions:
Spray inside of a four-quart pan with the cooking spray. Heat pan over medium heat.
Add seasoning blend and ham, stirring occasionally until lightly browned (about 3-5 minutes)
Add beans and stock. Bring to a boil then add slaw mix, allowing it to wilt into the soup.
Add seasonings, reduce heat, and simmer, uncovered, for 15 minutes.
Stir in frozen potatoes and cook an additional 5 minutes. Remove bay leaf and serve.
Yield: 4 to 5 servings
Variation: Substitute greens or spinach for the cabbage slaw mix.
