I went through years of misdiagnosing and no answers. I had digestion issues, joint aches and pain that went on for many years. There were doctor appointments, X-rays, ultrasounds and more, with no answers. One evening I came across the word “gluten,” and then another term—“celiac disease,” which gave me a light of hope. I was tested for this autoimmune disease, “celiac.” Shortly thereafter: “Tina your tests came back positive. You have celiac disease.” Now what? I knew nothing at all about gluten, and I was offered little advice. With much research and hard work, I became a major advocate in this field and helping others by the hundreds then the thousands.  I knew deep in my heart there was still something wrong. I was not at all better on this NO-gluten diet, which is the general “basic” diet for all celiacs. I was helping to spread the word daily about gluten-free and the gluten-free GRAINS. I wasn’t feeling all better though. I had less pain, but still had digestion issues and the pain would come and go. I thought that maybe there were others like me with similar issues. In less than a year, without much effort on my part, in research, I came across many hundreds just like me. I researched a bit and soon came across the paleo diet and the various “versions”. I love to read as well as write, so I read two quite popular books on the paleo diet and then tried it out for a week. Well, I fell on my face in hunger for my sweets but actually felt better.  “The hell with the paleo theory!” was how I felt. The only point now was there was no denying the fact that I was feeling better in only 7 days. Well, I am an intense lover of food, desserts, fine meals, cooking, baking and trying out new ideas–especially in the kitchen. I am a cook and love to bake. I announced my commitment to family and friends and never looked back. To the kitchen it was! It is quite a change in the kitchen. The properties of nut flours in baking, for example, don’t at all do what grains do in the mixing step or even the oven. There are tricks, tool and ingredients I have had to learn. Basically each recipe is its own creation, especially when it comes to baking. So here I am today with hundreds of Gluten-Free, Paleo, Paleo-ish, Raw and Keto friendly recipes of all kinds. I’m constantly learning and testing new recipes DAILY. I’m a walking success story of a person with an autoimmune disease which was running and ruining my life and which I’m now in control of. I believe in the paleo diet as a base to use as a template to expand from and the paleo lifestyle so much that I turned over my award-winning gluten-free website at the end of 2012, and I’m now working flat out in the kitchen, on my blog and writing what I discover through my research.
