“The first time ever I/we saw your face,” to use a line from Roberta Flack's famous song, Maria, my wife, and I were touched by her endearing care and love, as she gave a “Healthy Cooking” talk to us “young at heart” participants at a St. George “Golden Oaks” Senior Adult Meeting.
Maria and I could clearly tell how deeply Holly enjoyed her almost “ministry like outreach” per her speaking engagement in helping all of us to eat better, and to follow the dictum, “You are what you eat!”
And we could also easily sense Holly's spiritual connected-ness to us, as Holly sincerely smiled throughout her presentation and conveyed a deep conviction of sharing God's love to all.
It was there that Maria and I bought a copy of her Trim & Terrific Gulf Coast Favorites Cookbook, which we have found so many scrumptious and health meals, including Fabulous French Bread Loaf, Chicken and Sausage Gumbo, Marinated Avocado, Tomato and Onion Salad; we can't wait to try the Crawfish Enchiladas!
Maria has noted her love for getting many recipes from Holly and others from the Advocate:
“I get a lot of my recipes out of the Thursday Advocate. Some of my favorites are Crawfish Kingcake by Holly Clegg, Crabmeat and Brie Soup by Teresa Day,and Sherbet shared by Corrine Cook.”
The Crawfish Kingcake has been made by Maria many times for others, especially around Mardi Gras time, when I have sometimes added King Cake babies inside and out, as well as spicy broiled crawfish as a topping for pics that I've shared on FB over the years.
The Cranberry Yam Pecan Bread recipe, the middle pic at the beginning of this article, Maria has used a few times, and it has really been a hit for many folks, including the late Rev. Mary Moody and her Sister, Martha, whom both raved so much about them once after I had brought some to them about 5 years ago on a visit to Keithsville Lousiana, near Shreveport.
My Thursday early morning ritual – before going to work, is to give Maria the Eat/Play/Live Section of The Advocate so she can read Holly Clegg's, Teresa Day's and others' great articles and recipes, that Maria will try for us – and which we've always enjoyed.
I was inspired once by Holly, The Pioneer Woman and John Folse to write this poem for all of us guys to better integrate cooking into romance:
Want to put a little fire in your love for your spouse?
Here's some practical advice from a doghouse louse
Add some special spice and full zest to your dear
It's getting close to Valentine's so you better listen here
Sure she likes the candy and the flowers are a must
But what she really wants is a guy who she can trust
So take the time to cook up a special loving meal
With your beloved honey, it is the real deal
Cooking is so fun, and it helps the bond to grow
The ingredients are simple, the recipe, you know
First, you have to cut up, the seasoning then mix
Next, you stir in laughter, for the roux we like to fix
Add some zany flavors, try some new epicurean flare
Your honey needs to be wanted and know you really care
My sweetie, Cookie, spoils me from many a recipe book
And I've learned to help her, and romance is what we cook
She knows I love the 3 C's, Cayenne, Cardamon and Curry
When cooking, enjoy each moment, surely no need to hurry!
We love to learn from other great chefs, like Holly Clegg, The Pioneer Woman and the John Folse guy
He once aired Cookie's Pralines, they're so good they make you cry!
