I LOVE zucchini! Can't imagine why I hated it as a kid... hee, hee...

My three favorite recipes for zucchini are zucchini relish (Can't stand the store bought stuff now...and everyone always raves about our zucc. relish), zucchini quiche (YUMMY!!!) and my all time favorite... Zucchini Carrot Cake... absolutely superbly delicious! (beats carrot cake any day of the week for moistness...)

Happy harvesting... Wish we lived within zucchini tossing distance... we would take a few off your hands... hee, hee...

What lucky friends you have this veggie season... Zucchini is eaten here rarely..but your ideas sound great.. Maybe you should put together a "recipe" page as a news item ???
