Here in Colombia almost nobody cooks at night. Not a real meal, anyway. We eat big lunches and at night have a snacky sort of meal. When I cook spaghetti and stuff, I cook enough for the next day. Those ready-to-eat salads help a lot, too.

Martha, this blog caught my eye because this is a subject that has been on my mind lately. After having the summer off, I'm back to work in the classroom and having a tough time realigning my schedule after those long, lazy days. I wouldn't say I don't have time to cook, more like I don't have the energy. Hubby and I usually sit down to eat when he gets home around five, and then I whip up something for my son when he returns from football practice at around six thirty. I love to crock pot, but am limited due to hubby's preferences and dietary restrictions. Any tips you could offer would be greatly appreciated!
