Visiting Lapacek's Orchard.

If you’ve ever eaten homemade apple sauce it would be difficult to buy it at the grocery store again. With fall the apples are plentiful and a local orchard in just north east of Madison – Lapacek’s Orchard has over 40 varieties of apples available now through the end of October.

One of the best ways to preserve apples is to make homemade apple sauce – it’s easy and takes very little kitchen equipment. One tool which is inexpensive and will last a lifetime is an apple peeler. It makes the job of peeling fast and easy and produces an excellent by-product that is perfect for your compost bin.

Start by selecting a variety of apples such as Gala, Zestar, Paulared, McIntosh and Cortland or any other mix that will provide various texture and flavor to your sauce. A full peck of apples will yield about five quarts of sauce.

Peel and dice the apples to the size you prefer. Put apples into a xxx and add 1 cup water and 1 cup apple cider, 1 teaspoon cinnamon, ½ teaspoon nut met and then add white sugar or splenda to taste. Cook for about 30 minutes until the apples are soft.

Let cool and put into quart containers and then freeze. You can now enjoy your apples during the worst Wisconsin snow storm.
