Chapter 1
The Science behind Intermittent Fasting

The past decade saw a budding paradigm shift in diet and nutrition from what to eat to when to eat, from how many calories to how many times. At the heart of this movement is the concept and practice of intermittent fasting, which has gained popularity and acceptance as a diet method that can promote weight loss, as well as general health and wellness.
Intermittent fasting, shortened as IF, is not really a diet, but a timing of diet. This pattern of eating schedules food intake in such a way that the body can have enough time to digest and enough time to rest. Intermittent fasting calls for a change in the cycle of fasting and feeding.
The typical fasting-feeding cycle is 12:12. We spread our meals and snacks for a period of 12 hours, then rest or fast for 12 hours, including sleeping time. Longer waking hours due to work, leisure, anxiety, or insomnia, can lengthen the period for eating. In the modern world, it is not surprising to have someone who would eat every 3 to 4 hours, foregoing sleep for whatever reason.
What intermittent fasting strives to do is to extend the fasting period to 14 hours or more. Why is this significant? When the body is in the fed state, it burns sugar. It is only when the body is in its fasting state that it burns fat. With a prolonged period of fasting state, intermittent fasting gives the body time to access and burn fats that it would not be able to do if it is in a constant state of feeding.
