juice begins to bubble through
slits in the crust...

Strawberry Pie

8-inch pastry for two pies
1/3 cup plus 1 tablespoon shortening
1 cup all-purpose flour
1/2 teaspoon salt
2 to 3 tablespoons cold water

cut shortening into flour and salt
until particles are the size of small
peas.  Sprinkle in water 1 tablespoon
at a time, tossing with fork until all
flour is moistened. Gather pastry into
a ball. Roll pastry 2 inches larger than
inverted pie plate with flour-covered
rolling pin.  Fold pastry into quarters.
Unfold and ease into plate, pressing
firmly against bottom and side. Trim
overhanging edge of pastry 1 inch
from rim.  Fold and roll pastry under
even with plate.  Flute (pinch decorative
crust).  Fill and bake.

1/3 cups sugar
1/4 cup all-purpose flour
4 cups sliced strawberries
1 tablespoon lemon juice
1 tablespoon margarine

heat oven to 425 degrees
Prepare pastry.  Mix sugar
and flour.  Stir in strawberries,
turn into pastry-lined pie plate,
sprinkle with lemon juice, dot
with margarine.  Cover with
top crust that has slits cut in
it.  Seal and flute.

cover edge with 2-3-inch strip
of foil to prevent excess browning,
remove foil last fifteen minutes of
baking.

bake until crust is brown and juice
begins to bubble through slits in
crust, 35 to 45 minutes.

unimpressible...

It's that final stanza that takes the biscuit for me, Sage... having edited cookery books for a while, I must say that all the recipes and ingredients got a bit haphazard after a while... but think even I would have noticed this one, had it turned up!! Is it shortcrust or flaky you're workin with here?? :))
