Moods , Lenten food and weather

It is a dark gloomy day here in Huddersfield,particularly so
and the freezing cold air of winter has returned to haunt us.
weather and geographies often inform cultures,temperaments
etc.In Pakistan in the Himalayas there is a village on one
side of the mountain which recieves few hours of day light
and little sunshine .On the other side of the mountain is a
village that due to its position recieves lots of daylight
and plenty of sunshine.The village on the dark side is a
hostile and unwelcoming place to visit .its inhabitants
surly and often unpleasant .The village that gets plenty
sunshinen however is a very welcoming open place with
friendly, out going people. An example of how we are
shaped by weather and geography. If you go to Wales people
will make small talk out of the weather but if you go to
Greece they make make small talk about food and what they
had for lunch.
It is already half way through Lent which is observed at
varying degrees in the west from not knowing what it is to
cases of giving up chocolate and for the more traditional
abstaining from meat to be replaced by fish.In greece and
in other Orthodox traditions Fish,oil,dairy products,eggs,
meat are among the food forbidden for Lent. Fish oil and
wine are permitted at weekends. Although not rigourously
practiced these days,most Greeks will eat fasting food at
some period during Lent and some of it is scrumptious. I
include a recipe for a variation on fassolakia,a Greek
dish Eaten In lent.
Fill a large pot of green runner beans and add a cup of water
add two tins of tomatoes/cup of water
add salt pepper and veg. stock cube
add 3 cloves of chopped garlic
add a hint of basil
add three brown cloves
boil then simmer for 25 mins
Leave to marinate over night
(The garlic may be fried, if you wish)
