A few of my literary crumbs.... The best things in life often burn out like a light bulb. Some recipes are like that, no longer tempting or illuminating after a year or so. I felt life on the blink when I made my husband's birthday cake. I wanted to make him a classic cake. This cake was also a metaphor for life, so why not? It is a delicacy that seems so wrong but is so right.
I was craving pineapple. Actually he is indifferent to fruit but this cake was luring me. Of course, I have about 20 cookbooks but this recipe was nowhere to be found. Pineapple Upside Down Cake has become extinct. All the more reason for me to bring it back to life.
I can't say that growing up I liked this cake but it was always around. At school and church picnics. There is something so pleasing about flipping a cake over to find all that gooey stuff. The way each pineapple ring has a red hot cherry in the middle is pure art.
So like everything else, it was located on a Google search. I had dark brown sugar in my cabinet. Instead of butter I used that half butter-half whatever blend. The cake was as good as I had hoped it would be. He eats his slices for breakfast. We finished it off this morning.
Down the road, this cake may be totally obscure. Kids today want ice cream cakes. We don't bake by and large.
Cakes seem stuffy. If it is not crunchy, skip it. If it is fluffy, it must be evil. No joke, I know what is healthy and what's not. I bought turkey burgers yesterday and my husband is sweating bullets over that. But we eat things like salmon steaks served with potato salad. Folks in our generation have to get both extremes.
I got my galleys for my book, ALL ROADS LEAD TO HAZARD. I have read a couple of stories so far. They are knock-outs. I put each cherry in there and it is great to see them on the page of a real book. In twenty years, I can only hope my book will not be as obscure as Pineapple Upside Down Cake. Good things stand the test of time however. Mmmmmmm.
